Sweet & Sour Veggies


When many people think of veggies, they don’t think of anything too delicious – usually canned beets or raw brussel sprouts.

Not to give them a bad name, but there are ways to prepare veggies that will keep them healthy AND bump them up the delish-o-meter.

One of these dishes is the Sweet & Sour Veggies. To make them, you’ll need the following:

3 cups broccoli florets
2 medium carrots, sliced
1 large red bell pepper, sliced
¼ cup water
2 teaspoons of cornstarch
1 teaspoon of sugar
1/3 cup of unsweetened pineapple juice
1 tablespoon of reduced-sodium soy sauce
1 tablespoon of rice vinegar
½ teaspoon of dark sesame oil

Step 1. Combine broccoli, carrots and bell pepper in a large nonstick skillet. Add the water and bring it to a boil. Reduce the heat, cover it up, and steam those veggies for 4 minutes.

Step 2. In the meantime, combine the cornstarch, sugar, pineapple juice, soy sauce, and vinegar in small bowl and blend until its smooth.

Step 3. Drain the vegetables in a colander.

Step 4. Stir the soy sauce mixture and add it to skillet.

Step 5. Cook and stir it until the sauce boils and thickens.

Step 6. Return the vegetables to skillet and toss them with the sauce.

Step 7. Add the oil and toss it all well.

This should make 4 servings. Enjoy!
